Madeira Cake

Comments: Madeira cake is a traditional English favorite that's like a simple pound cake, the top of which is sometimes sprinkled with candied lemon peel or sugar halfway through baking. The name comes from the fact that it is usually served with a glass of Madeira. Some cooks also sprinkle the baked cake with Madeira before it cools. Ingredients: 1 cup (2 sticks/8 oz/226g) butter 3/4 cup plus 2 tablespoons granulated sugar Grated zest and juice of 1 lemon 3 large eggs 1 1/4 cups self-rising flour and 1/2 cup all-purpose flour (both flours mixed together) |
Instructions: Preheat oven to 350°F (180 C). Butter an 8 or 9-inch loaf pan. Line bottom of pan with parchment paper, and butter paper also. With electric mixer, cream the butter and sugar, and add the lemon zest. Add the eggs one at a time with a tablespoon of the mixture of both flours for each. Then gently mix in the rest of the flour and add the lemon juice. Sprinkle batter with the 2 tablespoons of sugar right before you put it in the oven and bake for 1 hour or until a cake-tester comes out clean. Remove to a wire rack, and let cool in the pan before turning out. Remove parchment paper. Slice and serve cake when completely cool. Makes 8-10 servings. |

as a teenager cakes are not always easy to make but i found this one very simple and the results were brilliant! it looks like it does in the picture and tastes just as good.

Very simple to make, I just prepared the ingredients in bowls and let the kids mix and all (5 & 6 yrs old) They wanted to add orange zest to it, so they more or less halved the mix, did one with lemon, one with orange, they both turned out ok, two small cakes....they were gone pretty quickly. Thanks
