Banana Cake

Comments: This is a very easy cake to make. It is very moist and is a great recipe when you need a nice simple dessert in a hurry. |
Ingredients: 2 large eggs 1 cup granulated sugar 1 cup sour cream 1 cup mashed ripe bananas (about two; 12 oz. total) 1 teaspoon vanilla extract 2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon ground cinnamon 1/8 teaspoon ground ginger 1/8 teaspoon ground cloves Confectioners' sugar |
Instructions: 1. In a large bowl, mix eggs, sugar, sour cream, bananas, and vanilla until well blended. In another bowl, stir together flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves. Stir flour mixture into banana mixture just until well blended. Scrape batter into a buttered and floured 9-inch square baking pan. 2. Bake in a 350°F (180 C) regular or convection oven until top springs back when gently pressed and a skewer inserted in the center comes out with moist crumbs attached, 30 to 35 minutes. Dust with confectioners' sugar before cutting into squares; serve warm or cool from pan. Makes 8 servings. |

Tasty! I didn't have sour cream, so I substituted 6 oz of strawberry-banana yogurt. I also didn't have the right sized pan so mine didn't cook evenly, but it was still excellent. It came out more like a bread than a cake (maybe due to the lack of sour cream). This is my new banana bread recipe!

It was really easy to make. I suggest using 5 "smaller, shorter and very yellowish" bananas in subsitution of the 3 normal big and long DEL-MONTE bananas. They are usually blackish blemishes on the banana skin. Gives more flavour and sweetness!!

I have tried baking banana bread/cake four times and this recipe was the only complete success that I had. =) I made some minor alterations in the ingredients (replacing sour cream with yogurt and omitting some spices because I didn't have them) but it still came out great.
