White Chocolate Fudge

Servings: Makes about 4 dozen pieces of fudge
 
Comments:
A great gift for your child's teacher during the holiday season. Place in a food-safe box and wrap with colored cellophane paper and tie with festive ribbon or a bow.

Ingredients:
12 oz. white chocolate
3/4 cup sweetened condensed milk
1 cup roasted whole almonds, coarsely chopped
1/2 cup sweetened dried cranberries
1 tbsp. grated orange rind

Instructions:
1. Microwave chocolate with sweetened condensed milk in large microwaveable bowl on HIGH for 2-3 minutes or until chocolate is almost melted. Stir until chocolate is completely melted.
2. Stir in roasted whole almonds, cranberries and orange rind. Spread in foil-lined 8 inch square pan.
3. Chill 2 hours or until firm. Cut into squares.
4. To store, place in refrigerator for up to 3 weeks. Do not freeze.

Makes 4 dozen pieces of fudge.

Variation
Stir in 1/2 cup each chopped red and green candied cherries and 1 cup roasted chopped pecans.

Can you NOT use the sweetened cranberries and grated orange rind, or do you have to?
