Cranberry Pear Crisp

This is a very warm and comforting treat on a chilly autumn or winter's day. For a nice variation on this recipe, substitute apples for the pears and serve with heavy cream or vanilla ice cream.

Ingredients:
4 large ripe pears
2 tbsp. brown sugar
1 tsp. ground cinnamon, divided
1/2 cup firmly packed brown sugar
1/2 cup all-purpose flour
3 tbsp. margarine
1 cup whole grain cereal flakes with cranberries and almonds, lightly crushed

Serve with: (optional)
Heavy Cream or
Vanilla Ice Cream

Instructions:
1. Preheat oven to 375°F (190°C).

2. Peel, core and slice pears. Toss with 2 Tbsp. brown sugar and 1/2 tsp. of the cinnamon in 8-inch square baking dish (or you may bake the crisp in smaller single serve baking dishes).

3. Mix 1/2 cup brown sugar, flour and remaining 1/2 tsp. cinnamon in large bowl. Cut in margarine until mixture resembles coarse crumbs. Stir in cereal. Sprinkle over pear mixture.

4. Bake crisps (or single serve crisps) for 30 minutes or until pears are tender. Serve warm with heavy cream or vanilla ice cream, if desired.

Makes 9 servings.

You can also substitute peaches if inclined. An excellent dessert with a cup of steaming coffee, any time of day!
