Pound Cake Truffles

Servings: Makes 20-30 balls
1 Sara Lee Pound Cake or other store-bought pound cake (thawed)
3 1/2 ounces granulated sugar
1 ounce (1/4 stick/2 tbsp/30g) softened butter
1 ounce unsweetened cocoa
2 tsp. rum
7 ounces good quality milk chocolate

Melt chocolate in a bowl over a saucepan of hot water. Break up pound cake and place in kitchen mixer. Add sugar, cocoa, butter and rum and mix until completely smooth. Roll mixture into small balls. Roll balls in chocolate with your hands and place on kitchen paper. When all balls are completed start again and re-coat all balls. Store in an airtight container.

Makes 20-30 balls.
