Yummy Apple Bread

Comments: Most quick breads are loaded with nuts,but not this one. You will be surprised how much clearer the sweet, fruity flavor of apple comes through. |
Ingredients: 3 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 teaspoon ground cinnamon 1/4 teaspoon baking powder 3 eggs, beaten 3 cups shredded, peeled cooking apples, (4 medium size apples) 2 cups granulated sugar 2/3 cup vegetable oil 1 teaspoon vanilla extract |
Instructions: Grease and flour three 7 1/2 x 3 1/2 x2-inch or two 8 x 4x 2-inch loaf pans. Set aside. In a medium bowl combine flour, soda, salt, cinnamon, and baking powder; set aside. In a large bowl combine eggs, apples, sugar, oil, and vanilla. Stir in flour mixture just until moistened. Pour batter into prepared pans. Bake in a 325 degree F (160 C) oven for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool completely on wire racks before serving. Wrap in plastic and store in refrigerator. Makes two 8-inch loaves, or three 7 1/2-inch loaves. Note: Golden Delicious, Rome, Granny Smith, Fuji, Jonathan, or Newtown Pippin apples are a good choice for this bread. |

Very tasty. Feeling lazy, I left the peels on and shredded the apples in the Cuisinart. After realizing I was almost out of sugar, cut it in half (1 egg plus 1 white), then baked 50 minutes in a 9" loaf pan. Yum.
