Apple Cake with Cream Cheese Frosting

What a lovely cake to serve at an afternoon tea or at a mid-day brunch. The Cream Cheese Frosting is optional, but I think the cake slices look so pretty topped with the frosting and for an extra touch, sprinkle shredded orange peel over the top for an attrative presentation.
4 cups diced Golden Delicious apples (or other good baking apples)
2 cups granulated sugar
2 large eggs
1/2 cup vegetable oil
2 tsp. vanilla extract
2 cups all-purpose flour
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
Confectioners' sugar, for dusting top of cake (optional)
Cream Cheese Frosting (see recipe below)
Shredded orange peel
Preheat oven to 350ºF/180ºC. Butter a 9 x 13-inch rectangular baking pan.
Sift together the flour, baking soda, salt and ground cinnamon. Set aside. In a large bowl, mix together apples and sugar and let stand. Beat eggs well; add oil and vanilla. Add sifted flour mixture and add to oil mixture; then add apple mixture. Stir well. Pour mixture into prepared baking pan and bake on middle rack of preheated oven for 50 minutes. Let cool completely in pan. Frost with Cream Cheese Frosting or dust top with confectioners' sugar, and sprinkle with shredded orange peel. Cut into squares and serve at room temperature. Store leftover cake covered in refrigerator.
Makes 12-16 servings.
Cream Cheese Frosting
1 (8 oz.) package cream cheese, softened
1/2 cup butter or margarine, softened
1 teaspoon vanilla extract
3 3/4 cups confectioners' sugar
In a mixing bowl, beat cream cheese and butter until smooth. Beat in vanilla and confectioners' sugar until mixture reaches spreading consistency. Chill frosting in refrigerator while cake cools. Once cake has cooled completely, spread over top of cake.
