Passover Marble Cake

A very traditional cake to serve on Passover. Always a favorite.

Ingredients:
8 large eggs
2 cups granulated sugar
1 cup matzo cake meal
2 tbsp. potato starch
2 oz. bittersweet chocolate
Confectioners' sugar (pareve for Passover), for garish

Instructions:
Preheat the oven to 350°F (180°C).

Beat the eggs and sugar on medium-high speed for 15 minutes. Add the cake meal and potato starch, beating at the lowest speed until mixed in. Melt the chocolate (you can melt it while beating the eggs and sugar). Pour 3/4 of the batter into an ungreased 10-inch bundt or tube cake pan. Add the melted chocolate to the remaining 1/4 of the batter and stir until evenly mixed. Spoon the chocolate batter into the pan and swirl it through with a knife.

Bake for 50 to 55 minutes. Let cool for 10 minutes on wire rack, then invert cake onto rack to cool completely. Dust with confectioners' sugar before serving, if desired.

Makes 12 servings.

This was nice cake but... I followed directions and used an ungreased tube pan and the cake would not release. I had a hard time getting it out of the pan. It finally came out in pieces. It's a nice texture so I'm going to use it in a trifle. The pan really needs some form of greasing.
