Norwegian Apple Muffins

A classic Norwegian apple cake often served for afternoon coffee inspired this simple, moist and flavorful muffin.

Ingredients:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup sugar
1/3 cup unsalted butter, softened
2 eggs
2 teaspoons grated lemon peel
1 medium (1 cup) apple, cored, peeled, finely chopped

Topping Ingredients:
1/4 cup granulated sugar
1/4 cup sliced almonds

Instructions:
Heat oven to 375°F (190 C). Stir together flour, baking powder, salt and cinnamon in medium bowl. Set aside.

Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Stir in eggs and lemon peel. Continue beating, scraping bowl often, until well mixed (1 to 2 minutes). Stir in flour mixture by hand just until moistened. Gently stir in apples. Spoon into greased or paper-lined muffin pans.

Sprinkle sugar and almonds evenly on top of each muffin. Bake for 18 to 22 minutes or until lightly browned. Let stand 5 minutes; remove from pans.

Makes 12 muffins.

i had never made muffins before, but i just got my first batch out using this recipe and they have already vanished!!!didn't even have time to let them cool down!!!my kids love them!

These were very good, but i like a lot of apples so i doubled up on the amount of apples in the recipe and they were even better! I would advise using two apples, maybe even more.
