Fresh Strawberry Pie

Strawberries are the most popular as well as the most plentiful berry. They are available year-round, with greatest abundance from April through July, when the California crops are at their peak. Make this delicious pie during the height of the season. Strawberry pie makes a great dessert for summer picnics or barbecues.

Ingredients:
1 (9-inch) pie crust, baked
3 pounds fresh whole strawberries, rinsed, drained and hulled* (See Note Below)
1 cup granulated sugar
3 tablespoons cornstarch
1 tablespoon lemon juice
3/4 cup water
1/2 cup heavy whipping cream

Instructions:
Arrange 2 pounds whole hulled strawberries in cooled baked pastry shell. Put remaining 1 pound of strawberries, sugar, and lemon juice in blender. Puree, and place mixture in saucepan; cook mixture on medium heat, bring to a boil, stirring frequently.

In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly. Pour mixture over berries in pastry shell. Chill for at least 4 hours before serving. In a small bowl, whip cream until soft peaks form. Serve each slice of pie with a dollop of whipped cream.

Makes 1 (9-inch) pie (8 servings).

*Note:
Use a Strawberry huller for removing stems from strawberries. They may be purchased online at Amazon.com, KitchenKrafts.com and many other stores on the internet.

I made this yesterday as strawberries are now in season. I only wish I had access to local, organic strawberries- I think the pie wouldn't have been as tart. Another thing I would change is to use fresh lemon juice as opposed to concentrate from a squeeze bottle. Next time, I'll try omitting it alltogether as the grocery store berries were tart and acidic on there own. I used the recipe for Classic Flaky Pie crust from your recipes and mixed it with some leftover Flaky Vinegar Pie Crust and it turned out wonderfully. I made some sweetened whipped cream and generously covered the edges and center of this pie. My niece, husband, sister, and neighbor had high praises, and today this pie is nearly gone.
