Chanukah Mini Cheesecakes

Now the children can have their own little individual cheesecakes for the festive holiday of Hanukkah. Have the kids help decorate the cheesecakes with you. They will enjoy this, and it's a good way for them to get to know their way around the kitchen a little bit.

12 vanilla wafers
2 packages (8 ounces each) cream cheese, softened
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs
1/2 cup mini colored baking chips
Chanukah icing decorations
Blue and yellow sprinkle decorations

You will need:
Chanukah baking cups, or muffin liners
12 cup muffin tin

Preheat oven to 325° F (160°C). Line muffin pan with Hanukkah baking cup liners.

Place one vanilla wafer in each liner. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs and mix well. Stir in mini baking chips. Pour over wafers, filling 3/4 full. Bake for 25 minutes.

Remove from pan when cool. Refrigerate. Before serving, top with sprinkles and Chanukah icing decorations.

Makes 12 mini cheesecakes.

Flavor Variation
1/2 cup semisweet chocolate mini baking chips, and substitute 1/2 teaspoon raspberry extract or flavoring for the pure vanilla extract.
