Mexican Hot Cocoa

What a delicious and so tasty warm drink for a chilly winter's day. If you've never tried Mexican Hot Cocoa, you're in for a treat. Top each cup of chocolate with a cinnamon stick if you like. It gives a wonderful flavor and looks pretty too.

Ingredients:
3 1/2 tbsp. granulated sugar
3 tbsp. unsweetened cocoa
1/4 tsp. ground cinnamon
2 1/3 cups milk
1/2 tsp. vanilla extract
Extra ground cinnamon or cinnamon sticks for garnish (optional)

Instructions:
1. Combine sugar, cocoa and cinnamon in small, heavy-duty saucepan; gradually stir in milk.

2.Warm over medium heat, stirring constantly, until hot (do not boil).

3. Remove from heat; stir in vanilla extract.

4. Beat with wire whisk until frothy.

5. Sprinkle a little cinnamon over hot cocoa or place a cinnamon stick in each cup (optional).

Makes 2 servings.

Well, my mother liked the Mexican hot cocoa, but it did not appeal to my taste. It seemed a bit bitter. I guess it just has to grow on you.
