Apple and Pecan Nut Cake

Ingredients: ![]() 2 green cooking apples, peeled 1 cup sugar 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1 teaspoon ground allspice 1/2 teaspoon salt 1 cup chopped pecans 1 egg 1/2 cup butter, melted Confectioners' sugar, for dusting |
Instructions: Preheat oven to 375 degrees F (190 C). Butter an 8-inch (20 cm) square cake pan. Cut the apples into large dice and mix with the sugar. In another bowl sift together the dry ingredients and mix in the pecans. Beat the egg and melted butter until combined, then add to the apple mixture. Lightly fold the sifted ingredients into the apple mixture and spoon into the prepared pan. Bake for 45-55 minutes, or until a skewer inserted in the center comes out clean. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely. Dust with sugar and serve. Makes 10 servings. |
