Cranberry Brownie Bars

Servings: Makes 18-20 bars
 
Ingredients:
Brownie Layer:
1 1/3 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 cup unsalted butter
1 cup cocoa powder
2 cups granulated sugar
4 large eggs
1 1/2 tsp. vanilla extract
1 cup chopped nuts (optional)

Cranberry Topping:
1 (8oz.) package cream cheese, softened
1 egg
1 tbsp. all-purpose flour
1/3 cup granulated sugar
1 can (14 oz.) whole berry cranberry sauce

Instructions:
For Brownie Layer:
In small bowl, stir together flour, baking powder and salt. Melt butter in large saucepan. Remove from heat. Stir in cocoa. Blend in sugar, eggs and vanilla. Stir in dry ingredients and nuts, if desired. Pour batter into greased 13 x 9 x 2 inch rectangular baking pan. Set aside.

For Cranberry Topping:
Beat cream cheese until light. Add egg, flour and sugar; mix well. Pour cheese mixture over brownie layer. Place cranberry sauce in small bowl; stir to break up. Drop small spoonfuls of cranberry sauce over cream cheese layer. Bake in 350°F(180°C) oven 35 to 40 min or until toothpick inserted in centre comes out clean. Cool. Cut into bars.

Makes 18-20 bars.
