This is a very refreshing dessert for a warm summer's day, or for a balmy evening. Low in fat and low in carbs for a great diabetic dessert.

Ingredients:
1 tbsp (15 mL) grated lemon rind
1/2 cup (125 mL) lemon juice
3/4 cup (175 mL) orange juice
1/2 cup (125 mL) sugar
2 cups (500 mL) 2% low-fat milk

Instructions:
In bowl, whisk lemon rind and juices with sugar until sugar is dissolved. Blend in milk. Pour into freezer container and place in freezer. Stir mixture occasionally until firm. (For longer storage cover container.

Let stand at room temperature 15 minutes to soften slightly before serving.

Makes 6 servings.

Per serving: 124 Calories; 3 g protein; 1.6 g fat; 25.6 g carbohydrate;
0.3 g dietary fiber.

How is this a diabetic/sugar free recipe if you use 1/2 cup of sugar?
