Thai Iced Tea

In Thailand, with hot, sticky weather that can wilt you in seconds, everyone revives with a variety of beverages, day and night. Just as we quench a thirst with soft drinks or lemonade, Thai's quench their thirsts with the natural nectars and exotic treats from mother nature. Fruit smoothies, luscious coconut drinks or combinations of juices are available fresh everywhere for a nice tropical refresher.

While beer and soft drinks are the beverages of choice with meals in Southeast Asia, tea is also an option. This sweet iced tea (orange colored after mixed with milk or cream) is often served in Thai restaurants, and is a delicious drink for dinner and dessert.

Ingredients:
6 cups water
1 cup Thai tea leaves
3/4 cup granulated sugar, or as needed
Crushed or cubed ice
1 1/2 cups (12 oz. can) evaporated milk or 12 oz. half and half

Instructions:
Bring water to a boil in a saucepan, add the tea leaves and remove pan from the heat.

Gently stir the tea leaves to submerge them in the water. Let the tea steep for 5 minutes, or until it turns a brilliant orange and has a strong taste with no bitterness. Pour the tea through a coffee filter or finemesh strainer into a pitcher. Add the sugar to the hot tea and stir well to dissolve completely. Set aside to cool to room temperature, then cover and refrigerate until ready to serve, or for up to 1 week.

To serve, fill tall glasses with crushed or cubed ice, add tea to fill about 3/4 of each glass, then pour about 1/4 cup of evaporated milk or half and half over the ice in each glass. If desired, serve with a straw. Serve immediately.

for 4-6 servings,( 4-6 glasses) does not need 1 cup of tea leaf. I found the website of tea factory who supplies Thai tea leaf to Pacific Rim Gourmmet. Here is their website- www.sribhud.com

According to the instruction printed on the box of Thai iced tea from Sribhud tea factory, it takes 1 tablespoon for 1 glass of iced tea. Brew the tea for a minimum of 7 minutes.
