Chocolate Cream Cheese Truffles

Ingredients:
1/2 cup chocolate chips
4 oz. light cream cheese, softened
1/4 cup cocoa
1 3/4 cups confectioners' sugar
Extra cocoa or confectioners' sugar, for rolling OR:
3 tbsp. ground almonds

Instructions:
1. Place chocolate chips in a glass bowl and microwave for 1 minute, until almost melted. Stir until smooth and set aside to cool slightly.

2. Beat cream cheese until smooth. Add chocolate and beat again until smooth.

3. Add cocoa and 1 cup of confectioners' sugar and stir until well blended. Add remaining confectioners' sugar and stir until you have a soft dough. The mixture will seem dry -- it may be easier to use your hands for final mixing.

4. Put about 1/4 cup cocoa, confectioners' sugar or ground almonds into a shallow dish. Shape chocolate mixture into 1" - 1 1/4" balls and roll in cocoa, confectioners' sugar, or ground almonds to coat. Place on a sheet of waxed paper and refrigerate until chilled.

Makes 2 dozen truffles.

Great recipe!!! My family loved them! I made them for Thanksgiving and I have a request to make them for Christmas now!!! Fun and easy to make!!!

they are yummy. very easy to make compared to the kind you'd make with heavy cream, boiling and cooling etc. the only thing I'd do next time is add some flavoring. ie mint or almond extract or something, they just seemed a little to plain. I would make them again.

Those truffles are excellent! The texture is great and they are VERY easy to make! I will try them again but I will try adding ground coffee beans to the dough... I think it'll give it an edge! Such a hit!
