Ingredients:  1 package (2-layer size) chocolate cake mix 1 1/3 cups chilled, freshly brewed coffee (to add to cake mix instead of water) Java Pudding Frosting 1/2 cup chilled, freshly brewed coffee 1/2 cup cold milk 1 package (4-serving size) vanilla flavor instant pudding and pie filling 1 tub (8 oz.) frozen whipped topping, thawed You will need: Paper muffin cups |
Instructions: Prepare cake mix as directed on package, substituting coffee for water. Spoon into a 12 cup muffin pan that has been lined with paper muffin cups, filling each cup 1/2 full. Bake as directed on package for cupcakes. Cool. Frost with Java Pudding Frosting. Refrigerate until ready to serve. Decorate as desired. Java Pudding Frosting: Pour coffee and milk into medium bowl. Add pudding mix. Beat with wire whisk 2 minutes. Gently stir in whipped topping. Spread on mini cakes. Makes 12 mini cakes. |
