|Servings: Makes 2 cups|
Serve this yummy butter on scones, croissants, or any type of toast that you like. It's also delicious on warm muffins.
1 cup (2 sticks/8 oz./226g) unsalted butter*, at room temperature
3/4 cup finely chopped strawberries (wash and pat dry prior to chopping)
3 tbsp. confectioners' sugar
1 tsp. vanilla extract
You may substitute whipped butter for the 1 cup (2 sticks) regular unsalted butter, if desired.
Beat all ingredients with an electric mixer at high speed until smooth.
Delicious on toast, scones, bagels, muffins, pancakes and waffles.
Makes 2 cups strawberry butter.
