White Cupcakes

Servings: Makes 24 cupcakes
 
Ingredients:
2 1/4 cups (550 mL) all-purpose flour
1 1/2 cups (375 mL) sugar
1 tbsp. (15 mL) baking powder
1 tsp. (5 mL) salt
1/2 cup (125 mL) shortening
2/3 cup (150 mL) milk
1 tsp. (5 mL) vanilla extract
1/3 cup (75 mL) milk
4 egg whites

Instructions:
Blend flour, sugar, baking powder and salt together in large mixer bowl.

Add shortening, 2/3 cup (150 mL) milk and vanilla.

Beat 2 minutes on medium speed, scraping sides and bottom of bowl constantly.

Add remaining milk and unbeaten egg whites.

Beat 2 minutes more, scraping bowl frequently.

Fill greased muffin cups 3/4 full and bake at 350°F (180°C) for 15 to 20 minutes or until toothpick inserted in center comes out clean.

Remove from pans and cool.

Frost and decorate as desired.

Makes: 24 cupcakes.
