Pineapple-Orange Sauce

Servings: Makes 8 servings
This sauce will work well served over ice cream, fresh fruit or cakes. It's especially nice served during the Chinese New Year, as pineapples and oranges are two favorite fruits used during this festive holiday time.

20 oz. can undrained pineapple chunks (in juice)
1/2 tsp. grated orange peel
1/2 cup orange juice
1 tbsp. cornstarch
1 tbsp. sugar
1 tsp. ground ginger

Combine pineapple chunks (including the juice), 1/2 cup orange juice and 1 tsp. orange peel with remaining ingredients in a saucepan. Cook, stirring constantly until sauce boils and thickens. Cool. Serve over fresh fruit, cakes, or ice cream or (as shown in photo above), place your dessert over sauce.

Serves 8.
