Comments: When you've had a busy day, but want to make a nice old fashioned custard pie, try this recipe. It's quick and will be ready to serve right after dinner. |
Ingredients:  1 ready-made 9-inch pie crust, baked 1 package (3 2/5-oz) vanilla pudding and pie filling mix, (not instant) 1/3 cup water 1 can (12-oz.) evaporated lowfat milk 1 tablespoon lemon juice 2 teaspoons grated lemon peel 1 pint strawberries, sliced, (optional) 1/4 cup mint leaves, (optional) |
Instructions: Combine pudding mix and water in small saucepan. Add evaporated milk, lemon juice and lemon peel; stir until smooth. Cook over medium-low heat, stirring constantly, until mixture comes to a boil and thickens. Pour into crust; refrigerate for 1 hour or until set. Top with fruit and mint leaves before serving. Tip: About 3 peeled, sliced kiwifruit or 2 oranges (sectioned) could be used in place of the strawberries, or one could dress the pie with any desired combination of these fruits. Makes 6 servings. |
