Almond Butter Melt-Aways

Servings: Makes 12 dozen (1 3/4 inch) cookies |
Ingredients: 4 oz. almond paste 3 cups confectioners' sugar 4 large eggs 2 cups (4 sticks) unsalted butter 5 3/4 cups cake flour |
Instructions: Heat oven to 375°F (190°C). Line cookie sheets with parchment paper. In large bowl, combine almond paste and sugar; beat well. Add eggs one at a time, beating well after each addition. Add butter; beat until light. Add flour; mix until smooth. With a Number 4 star tip, pipe onto paper-lined cookie sheet. Bake at 375°F (190°C) for 6 to 8 minutes or until edges are light brown and centers are set. Do not overbake. Makes 12 dozen (1 3/4 inch cookies). |

Oh, one last thing. If I don't have any almond paste on hand, can I substitute it with almond extract? And if I can, what changes do I have to make to the recipe?

Great recipe, and for the love of god, do not use almond extract in place of almond paste (Marzipan). You could use ground almonds mixed with corn syrup with a touch of rose water or orange juice. Make sure it makes a thick paste.
