French Bread Pudding with Orange Sauce

Ingredients: 6 cups french bread cubes (about 8 oz.) 3/4 cup raisins 3 eggs, beaten 1 (14-oz.) can sweetened condensed milk 2 tablespoons unsalted butter or margarine, melted 1 tablespoon grated orange rind 2 teaspoons vanilla extract 1 teaspoon ground cinnamon Orange Sauce - (see recipe below) |
Instructions: 1. Heat oven to 350 degrees F (180 C). Place bread cubes and raisins in buttered, 9-inch square baking pan. 2. Mix together eggs, sweetened condensed milk, 2 1/2 cups hot water, butter, orange rind, vanilla, cinnamon and salt. Pour evenly over bread, moistening completely. 3. Bake 40 minutes or until knife inserted in center comes out clean. ORANGE SAUCE In saucepan, combine 1 cup orange juice, 1/2 cup sugar and 1 tablespoon cornstarch. Over medium heat, cook and stir until thickened and bubbly. Serve with warm bread pudding. Makes 6-9 servings. |

Excellent! It turned out just as I had hoped - smooth and creamy. I did however make a few changes. First I omitted the cinnamon and used 1 1/2 cups milk and 1 cup hot water instead of the 2 1/2 cups of hot water the recipe calls for. I mixed all the ingredients well by hand and let it rest to let the flavours blend, and then I poured it into a greased pan. Just heavenly :)
