Chocolate Cake

Ingredients: 2 1/2 cups self-raising flour, sifted 1/2 cup cocoa powder 2 cups granulated sugar 1 cup Pepsi or Coke 1/4 teaspoon bicarbonate of soda (baking soda) 2 teaspoons baking powder 1 cup butter or margarine, softened to room temperature 4 eggs 1 teasppon vanilla or grated lemon zest |
Instructions: Preheat oven to 175 degrees C/350 degrees F. 1. In a mixing bowl beat together the eggs and vanilla (or lemon zest) until fluffy. 2. In a separate bowl, beat softened butter (or margarine, if using) and sugar until white and fluffy. 3. Add the egg mixture. 4. Then, mix in the flour, baking powder, baking soda and the cocoa powder alternatively with the Pepsi (or Coke, if using), making the flour the last portion. 5. Spoon mixture into an 8 or 9-inch round cake pan and place in preheated oven and bake for 45 minutes. Bon Appetit! |

I tried this recipe as soon as I read it because I wanted to try a home-made one for a change instead of a fake-out! and surprisingly it tastes even better than the ones from an expensive bakery!
