1 Point Cranberry-Orange Muffins

If you are your watching your intake of sugar and fat as I am, then try these 1 Point (Weight Watcher Points) muffins. They are so tasty, low in sugar (carbohydrates) full of good fiber, low in calories, and are so easy to make. A delicious breakfast treat or enjoy them as a healthy snack during the day. I like to heat them up a little in the microwave (just for 10 or 15 seconds) and spread a small amount of low-calorie margarine on them. Very Yummy!!

Note:
Any of the Krusteaz Fat Free Muffin mixes may be used in this recipe.

Ingredients:
1 package Krusteaz FAT FREE Cranberry-Orange Muffin Mix (you may use any of the Krusteaz FAT-FREE Muffin Mixes such as: Cranberry-Orange, Wild Blueberry, Apple-Cinnamon or Banana)
2 cups wheat bran
2 teaspoons baking soda
1 cup unsweetened, no sugar added or natural unsweetened applesauce
1 cup water

NOTE:
You will need 2 (12 cup) muffin pans. You will only need to use 18 cups of the 24 cups. When filling cups with muffin batter, fill empty muffin cups half way up with water for even baking.

Instructions:
Preheat oven to 400 degrees F/200 degrees C. Spray 2 (12 cup) muffin pans with non-stick cooking spray (such as Pam), or you may line muffin cups with paper muffin or cupcake liners. Set aside.

In a large bowl, mix all ingredients until well moistened. Spoon batter into muffin pan cups and bake in preheated oven for 20 -25 minutes. Remove from oven and let muffins cool on wire rack. Serve warm or at room temperature.

Storing Muffins:
Muffins can be stored at room temperature (wrapped in plastic wrap or aluminum foil) for up to 2-3 days. Also muffins freeze well. If freezing, wrap tightly in plastic wrap and freeze.

Makes 18 muffins.

We love these! Most often we add blueberries and use the banana mix. We do add 2 Tbsp. of Xylitol for a bit more sweetness. They are a healthy & low-point staple in our house!

We made the Apple Cinnamon and they are delicious! I think they might be two points at least in the new Points Plus system.
