Cranberry Orange Scones

Servings: Makes 8-10 scones |
Ingredients: 1 3/4 cups all-purpose flour 1 tbsp. granulated sugar 2 tsp. baking powder 1/2 tsp. salt 1/4 cup (1/2 stick/2 oz./56g) firm unsalted butter or margarine 1/2 cup whipping cream 1 egg, lightly beaten 1 cup sweetened dried cranberries (such as Craisins) 2 tsp. finely-grated orange peel |
Instructions: Preheat oven to 425°F/220°C. Lightly grease a cookie sheet. Combine dry ingredients in a large mixing bowl. Work butter or margarine into dry ingredients until butter is the size of small peas, using a pastry blender or fork. Add remaining ingredients, mixing just until the dry ingredients are moist. Turn dough onto a lightly floured surface and gather into a ball. Pat into a circle 3/4-inch thick. Cut dough into 8 to 10 wedges. Place on cookie sheet. Sprinkle with sugar. Bake 12 minutes or until golden brown. Makes 8-10 scones. |

These scones are delicious. They're very easy to make, and turn out great! You can substitute in a 1/2 cup of chocolate chips and a 1/2 cup Craisins for a fun and yummy twist. A simple way to dress up any breakfast!
