Sugar Free Coconut Balls

Comments: These creamy candies contain no sugar, yet are full of flavor and easy to make. |
Ingredients: 1 package (8 ounces) light cream cheese, softened 2 teaspoons liquid sugar substitute, such as Sweet & Low Brand 1/2 teaspoon coconut extract 1 cup unsweetened flaked or shredded coconut Grated unsweetened chocolate, unsweetened cocoa powder, toasted sesame seeds or toasted chopped almonds for rolling |
Instructions: Beat cream cheese, sugar substitute and coconut extract in medium bowl with electric mixer until smooth. Stir in coconut. Refrigerate until slightly firm, about 20 minutes. Place grated chocolate in shallow bowl. For each candy, shape scant 1 tablespoonful of the mixture into 1-inch ball. Roll balls in chocolate. Store in refrigerator. Sugar-Free Almond Balls: Substitute chopped toasted almonds for the coconut and 1/4 teaspoon almond extract for the coconut extract. Roll in grated chocolate. Makes 28 coconut balls.
