Light Homemade Peppermint Ice Cream

Really good and refreshing, almost guilt free homemade ice cream.

Ingredients:
1 (14 oz.) can Fat-Free or Light Eagle Brand Sweetened Condensed Milk (or any other brand Light or Fat-Free sweetened condensed milk)
1 (8 oz.) block or container Light cream cheese
1 cup crushed peppermint candies (sugar free)
2 cups Cool Whip Lite (or any other brand frozen lite non-dairy whipped topping)

Instructions:
Mix cream cheese and sweetened condensed milk. Add to the mixture the crushed candies, mix well. Fold the Cool Whip into the mixture. When everything is well blended together pour into a freezer container. Freeze for about 6 to 8 hours or until the mixture is well set. If you would like, at the beginning of the freezing process you can remove the container from the freezer and mix the mixture again so it would be creamier.

Voila!! Homemade light peppermint ice cream!

Makes approximately 2 liters (2 quarts).

For the Cool Whip (I use Nutra Whip) you can put more than 2 cups. The recipe calls for 2 cups, but I put in about 4 cups instead. Enjoy!!

Sorry cool whip has got to be the most horribly unhealthy excuse for a food on the planet. This has nothing on real peppermint ice cream....
