6-8 ripe bananas, mashed
250 g (approximately 1 1/8 cup) unsalted butter, melted
1 cup chopped walnuts
2 eggs, beaten
2 tablespoons (32g) vanilla sugar
3 teaspoons baking soda
1 cup soft brown sugar
2 pinches salt
3 cups all-purpose flour (plain flour)
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Preheat oven to 350 degrees F/180 degrees C. Lightly grease two 8 or 9-inch loaf pans.

In a large bowl combine all ingredients. Mix well and spoon batter into prepared loaf pans. Bake in preheated oven for 50-60 minutes. Let bread cool in pans for 15 minutes, then transfer to cooling rack to cool completely.

Makes 2 loaves.

It is the BEST recipe to make a banana nut bread regarding the batter especially when adding eight ripe bananas . But the best way to bake a banana bread , as far as the banana fruit caramelizes and burns quickly when exposed to heat , is to bake the banana bread in the oven at the first 35 minutes at 350 degrees F and immediately turn the oven down to 300 degrees F to have a very good baked banana bread.
