Pumpkin Cornbread

Ingredients:
1 box Trader Joe's Cornbread Mix (15 oz.)
1 egg
3/4 cup milk
1/2 cup oil
1 tsp. vanilla extract
1 tsp. ground nutmeg
1/2 can canned pumpkin

Instructions:
Preheat oven to 350 degrees F/180 degrees C. Grease a 8 x 8-inch square or round baking pan.

Combine cornbread mix, egg, milk and oil. Add vanilla then nutmeg. Mix together. Add pumpkin to mixture then pour into prepared pan. Bake in preheated oven for 35-40 minutes or until knife comes out clean.

Makes 8 servings.

Trader Joe's makes an EXCELLENT mix that is very tasty all by itself and the addition of pumpkin is lovely. All the goodness of cornbread paired with a favored fall flavor. Note, compared to the other Pumpkin Cornbread recipes, prep time for this recipe is a snap with no loss of flavor.
