Banana Blueberry Cake

This Banana Blueberry cake is lovely served at brunch, or with coffee or tea in the late afternoon. A scoop of vanilla ice cream or homemade custard would go nicely with it.

Ingredients:
1 cup mashed bananas (about 3-4 large bananas)
1/2 cup (1 stick + 1 tbsp./4 1/2 oz./125g) unsalted butter
1 tsp. vanilla extract
1 cup granulated sugar
2 large eggs, lightly beaten
3/4 cup fresh or frozen blueberries (do not thaw, if using frozen)
1/3 cup sour cream or plain yogurt
2 cups self-rising flour
Confectioners' sugar

Instructions:
Place butter, vanilla and sugar in a bowl, and beat until light and creamy. Add eggs and beat well. Fold in flour, sour cream, mashed bananas and finally blueberries.

Spoon mixture into a greased 8-9 inch (22cm) round cake pan and bake in preheated 180 degree C/350 degree F degree oven for 1 hour and 10 minutes (or until toothpick inserted in center of cake comes out clean). Allow to cool in pan before turning out to serving plate. Dust top with confectioners' sugar. Serve at room temperature.

Makes 6-8 servings.

I made this cake for a large crowd of hungry Aussies! I doubled the recipe and baked it in a 13x9x2 rectangular cake pan for 86 minutes at 170 degrees C (I warmed the oven with fan force and then turned the fan off when I put the cake in to bake). Everyone loved it. I will definitely add this recipe to my all time favourites. Thanks for the recipe!

My daughter can not have sugar so I had to tweak it a bit. I used 1/4 cup of white sugar, 1/4 cup of honey, 1/4 cup of agrave sugar and 1/4 cup of sugarfree blueberry applesauce. I also used 1 tsp of sugar. It may seem a bit fussy however if you can't have the sugar it works out great. It was sweet and moist.

I think this is one of the best banana and blueberry cake recipes I have found! I used the batter in a 12 hole muffin tin and baked for 30 mins = perfect light muffins. Thanks for sharing this online
