Sandwich Cake for Ramadan

Ingredients: 1 1/2 sticks (6 oz./170g) butter 1 1/4 cups caster or superfine sugar 6 eggs (weighing approximately 61 grams each) 2 1/2 cups self-raising flour 2 tablespoons Golden syrup 4 to 5 tablespoons jam (jam of your choice), softened with back of spoon until smooth 1/2 tablespoon granulated sugar, to sprinkle on top of cake |
Instructions: Preheat oven to 180 degrees C/350 degrees F. Grease and line with baking paper two 8-inch x 8-inch round or square baking tins. Cream butter and sugar until light and fluffy. Add eggs one at a time. Add flour a little at a time. Pour in syrup and blend mixture well. Pour equal amount of mixture into prepared tins. Bake in preheated oven until done, 25 to 30 minutes. Let cakes cool in tins, then remove from tins and transfer cakes to a wire rack to cool completely. Spread the jam on top of one cake and top with the other cake. Sprinkle top with sugar. Makes 8 servings. |
