Pizzelle Cones

Ingredients: 6 ounces (3/4 cup) butter, melted and cooled 3/4 cup granulated sugar 3 large eggs 1 teaspoon vanilla extract 1 tablespoon anise extract or Sambuca 1 teaspoon baking powder 1 3/4 cups flour |
Instructions: Preheat electric pizzelle iron for 5-8 minutes, or follow manufacturer's instructions. In a heavy-duty mixer fitted with a paddle, mix butter and sugar about 3 minutes, until light and fluffy. With the machine on high, add eggs one at a time. Add vanilla and the anise extract. Gradually add the baking powder and flour and mix for another minute. Scrape sides down as necessary. Drop a heaping tablespoon onto the center of the heated surface of the pizzelle iron, close the cover and cook about 40 seconds, or until the pizzelle is soft and lightly golden. Lift lid and remove pizzelle to cooling rack. To make pizzelle cones, immediately roll pizzelles around a wooden pizzelle mold. Hold the bottom of the cone together for several seconds to form a peak. Store pizzelles in an airtight container. Note: Purchase Pizzelle Iron (Baker), and wooden pizzelle forms at Cooking.com or other kitchenware stores on the Internet. |
