Ingredients: For the Cake: 1 cup oats (can be quick or old-fashioned, uncooked) 1/2 cup (1 stick/4 oz./113g) butter or margarine 1 1/2 cups boiling water 1 cup granulated sugar 1 cup brown sugar, firmly packed 2 eggs 1 teaspoon vanilla extract 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 2 cups all-purpose flour 1/2 cup nuts, chopped 1 cup raisins For the Topping: 1 cup shredded coconut 1 1/2 cups brown sugar 1/2 cup evaporated milk 4 tablespoons (1/2 stick/2 oz./56g) butter or margarine 1/2 teaspoon vanilla extract |
Instructions: For the Cake: Pour boiling water over oats, let stand 20 minutes. Add remaining cake ingredients. Pour mixture into a greased 9 x 13-inch baking pan. Bake at 350ºF/180ºC for 30-35 minutes. For the Topping: Mix all topping ingredients together and spread over hot cake. Put under broiler until brown and bubbly, about 2 to 4 minutes. Watch carefully as the topping will brown quickly. Makes 12 servings. |

I cook 2 of these cakes and take them to a Blue Grass Singing every month. People just fought over this cake and wanted the recipe. I made it a little different. I left out the raisins because I don't like them. I have given out about 10 of the recipes so far and everybody loves it.

I have tried this recipe with my family of 10(Imagine how many people to please!). Everyone loved it, and wanted MORE! The second time I made it, I added baking powder which made it fluffy, and more like a cake. The first time, it came out rather like a brownie...but that can also be because I am a beginner baker :)
