Apple Crumb Bars

These bars are wonderful in the fall with a nice hot cup of coffee or tea.

Ingredients:
1 cup quick cooking rolled oats
1 1/4 cups all-purpose flour, divided
1/2 cup brown sugar
1/2 tsp. baking powder
1/2 tsp. salt
2 sticks (1 cup/8 oz/226g) butter, softened at room temperature
1 egg, beaten
4 apples peeled, cored and sliced
1/2 cup granulated sugar
1/2 tsp. ground nutmeg and/or ground cinnamon

TOPPING:
1/3 cup all-purpose flour
1/3 cup quick cooking rolled oats
1/3 cup brown sugar
1/2 stick (1/4 cup/2 oz/56g) cold butter

Instructions:
Preheat oven to 350 degrees F (180 C).

In a mixing bowl, combine all topping ingredients. Stir well with fork. Set aside.

In another mixing bowl, combine oats, 1 cup flour, brown sugar, baking powder and salt. Cut in butter until the mixture is crumbly. Stir in beaten egg. Spread mixture into a 15 x 10 x 1-inch baking pan. Toss sliced apples with sugar and remaining flour and nutmeg or cinnamon (or use both, if desired). Spread over oatmeal layer and sprinkle with topping mixture. Bake in preheated oven for 30-35 minutes. Cool and cut into bars.

Makes 24 bars.

These were alright, nothing special. First I would not use a 10 x 15 x 1-inch pan as there is not enough mixture. I then tried a 9 x 13 x 2-inch pan and it was to big, I then went to a 9 x 9-inch size pan; this size was okay. I would use this size or a 8 x 8-inch pan if I should make this recipe again. Plus, I would use more apples.(I like lots of apples).
