No Sugar Added Peanut Butter Cookies

Servings: Makes 42 cookies
 
Ingredients:
1/4 cup margarine
1/4 cup creamy peanut butter
2 tbsp. granulated sugar replacement
1 egg
1/4 cup water
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder

Instructions:
Cream together margarine, peanut butter and sugar replacement. Add egg, water and vanilla. Beat until fluffy. Combine flour, baking soda and baking powder in sifter and sift dry ingredients into creamed mixture. Blend completely. Chill overnight. Drop by teaspoonfuls onto lightly greased cookie sheets, 2 to 3 inches apart. Press by flat criss-crossing fork. Bake in preheated 375 degree F (190 C) oven for 12 to 15 minutes or until golden brown.

Makes 42 cookies.

My diabetic husband described these as tasting like pie dough with a very very faint hint of PB...As an avid baker, I have to agree...Sorry!

This recipe was excellent but my dad (the diabetic) says it would have been much better with the crunchy style peanut butter instead, but otherwise we enjoyed them very much.

good base recipe to alternate and actually make cookies that taste like there is peanut butter in them.
