Diabetic Cake

Comments: My mother was a diabetic and she loved this cake very much. |
Ingredients: 2 1/2 cups water 2 1/2 cups raisins 2 cups unsweetened applesauce 3 eggs 2 Tbsp. Sweet & Low (sugar substitute) 1 1/2 cups oil (I use 1 cup) 3 cups self-rising flour 3 tsp. ground cinnamon 2 Tbsp. vanilla 1/4 tsp. baking soda |
Instructions: Cook raisins and water until all the water has cooked out. Add applesauce, sugar substitute, oil and eggs. Blend in flour, baking soda, cinnamon and vanilla, mixing well. Pour batter into a well greased and floured 10 x 4 1/2-inch tube or bundt pan. Bake in a preheated oven at 350 degrees F (180 C) for 30 to 35 minutes or until cake tests done. Makes 12 servings. |

I made this cake for a birthday for my office. Many in my office are either on weight watchers, LA Diet, or some other diet and the rest are diabetic. This cake was just the ticket - it was delicious and everyone loved it. I am going to make it again tonight to take to a charity event. Thanks

Have not tried baking but it sure sounds and looks good. Can I use Splenda for the sweetener. I am not sure where to get Sweet & Low in Singapore. BTW, how is the texture of this cake? I have read that many sweeteners just make cakes very rubbery. Will this cake be like this? Thanks a heap!
