Glazed Strawberry Pie

Comments: If you grow your own strawberies, use some of them for this fresh strawberry pie, or if you have a farmer's market nearby, pick up some fresh strawberries and make this pie for your family for a delicious summer dessert. Top the pie, if desired, with whipped cream or non-dairy whipped topping and enjoy! |
Ingredients: 1 (9-inch) pie crust, baked 1/2 cup granulated sugar 3 tablespoons cornstarch 1 cup water Dash of salt 1/4 teaspoon vanilla extract 3 tablespoons strawberry gelatin Red food coloring (optional) 2 pints (4 cups) fresh strawberries, sliced in halves or quarters |
Instructions: Bake pie crust and let cool. Set aside. Combine sugar, cornstarch, water and salt and bring to a boil. Boil on medium heat for 1 minute. Remove from heat and mix in gelatin, vanilla and a few drops of red food coloring (optional). Let glaze cool to room temperature. Brush bottom of cooled pie crust with a little of the strawberry glaze. Gently fold sliced strawberries into cooled glaze and pour into baked pie shell. Chill in refrigerator for 4 hours or until set. Serve with whipped cream, if desired. Makes 6-8 servings. |
