This is especially good for diabetics. Any flavor of sugar-free jello can be used to make this low-fat, low-sugar cheesecake dessert.

Ingredients:
1 package (4 servings size) JELL-O Sugar-Free Low Calorie Gelatin (any flavor of your choice)
2/3 cup boiling water
250 grams (8 oz/1 cup) ultra light Philadelphia cream cheese (in the USA, it is called Low Fat or Fat-Free cream cheese)
250 grams (8 oz/1 cup) 1% or fat-free cottage cheese
250 grams (8 oz/1 cup) Cool Whip Lite, thawed
1/4 cup (4 tablespoons) Oreo Cookie Crumbs or graham wafer crumbs (optional)

Instructions:
Prepare Jell-O with the 2/3 cup boiling water. Add no further water. Stir until well dissolved. Place in refrigerator to set.

When the jello is set, blend cream cheese and cottage cheese and the set jello in a blender. Fold in the thawed Cool Whip Lite. Stir gently until well blended.

Sprinkle crumbs onto bottom of 8 or 9-inch springform pan or 9-inch pie plate sprayed with cooking spray.

Spoon Jell-O mixture into pan or pie plate. Smooth top with spatula. Place in refrigerator for 4 hours to set. When ready to serve, if desired, garnish with extra Cool Whip Lite or decorate slices of cheesecake with fresh fruit.

Makes 6 servings.

Silvia, the Nutritional Information is per serving, including the amount of carbohydrates. The recipe makes 6 servings, so 14 grams of carbohydrates is for 1 serving which is quite low for a dessert. Enjoy!

Sylvia, you can lower the carb count by whipping your own cream and using low carb ingredients for the crusts.

I've made this recipe many times. But I don't make it with the crust. It holds up well and takes out unwanted carbs. I make this for parties/pot lucks and everyone loves it
