Applesauce Layer Cake

Ingredients: 2 1/2 cups cake flour 3 teaspoons baking powder 1 teaspoon ground cloves 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground allspice 4 tablespoons unsweetened cocoa 2/3 cup (1 1/2 sticks/6 oz/170 g) butter 2 cups granulated sugar 4 egg yolks 3/4 cup applesauce 1/2 cup milk 1 teaspoon vanilla extract 2/3 cup raisins (optional) 1/2 cup nuts, chopped (optional) 4 egg whites, beaten Cream Cheese Frosting (see recipe below) |
Instructions: Preheat oven to 350 degrees F (180 C). Grease and flour two 9-inch round cake pans. Sift cake flour 4 to 5 times with baking powder, cloves, cinnamon, nutmeg, allspice, and cocoa; set aside. In a large mixing bowl, cream butter; add sugar and beat until well blended. Add egg yolks and applesauce; beat until smooth. Add the milk alternately with flour mixture. Add vanilla, raisins, and nuts (raisins and nuts are optional). In a separate bowl, beat egg whites until stiff peaks form; fold into batter. Pour into prepared cake pans. Bake in preheated oven for 40 minutes or until toothpick inserted in center comes out clean. Cool completely and fill and frost with Cream Cheese Frosting. If desired, place nuts around top of cake for decoration. Makes 10 to 12 servings. Cream Cheese Frosting Ingredients 1 (8 oz.) package cream cheese, softened to room temperature 2 teaspoons vanilla extract 1/2 cup butter or margarine, softened 4 1/2 to 4 3/4 cups sifted confectioners' sugar Instructions In large mixing bowl beat cream cheese, butter (or margarine, if using) and vanilla with an electric mixer on medium to high speed until light and fluffy. Gradually add 2 cups of the confectioners' sugar, beating well. Gradually beat in enough of the remaining confectioners' sugar to make frosting of spreading consistency. Makes about 3 cups. |

Love all your recipes but it would be so useful if metric equivalents were just shown alongside the cup measures. I know this site has gone to great lengths to provide a conversion chart but it doesn't always cover all ingredients. In this instance the applesauce is not covered in the table. Thank you anyway for a lovely recipe.
