Creamy Butterscotch Pudding

Ingredients: 2/3 cup brown sugar, firmly packed 1 tbsp. plus 1 tsp. cornstarch 1 tbsp. plus 1 tsp. all purpose flour 2 egg yolks 2 cups milk 2 tsp. unsalted butter 1 tsp. vanilla extract |
Instructions: Combine first 3 ingredients in a heavy saucepan. Combine egg yolks and milk and stir into dry ingredients. Heat over medium high heat, whisking continuously until mixture just comes to a boil. Remove from heat. Whisk in butter and vanilla until butter is melted. Transfer to a serving bowl. Press plastic wrap over pudding surface to prevent skin from forming. Serve warm or cold. Makes 4 servings. |
