Butterscotch Brownies

Great and gooey but still wholesome.

Ingredients:
2 cups firmly packed brown sugar
1/2 cup vegetable oil
2 eggs, beaten
1 tsp. vanilla extract
2/3 cup whole-wheat flour
1/2 cup powdered milk
2 tsp. baking powder
1/2 tsp. salt
1 cup chopped walnuts
2/3 cup wheat germ

Instructions:
Preheat oven to 375 degrees F (190 C). Grease and flour an 8-inch square baking pan.

Combine sugar, oil and eggs and mix well. Add vanilla; sift flour and stir into sugar mixture. Stir in the milk, baking powder and salt. Dredge walnuts in flour (so they won't sink). Stir walnuts and wheat germ into batter. Spread batter evenly in the pan; bake for 25-30 minutes until the edges begin to brown. Cool for five minutes before cutting into squares.

Makes 9 brownies.
