Pineapple Casserole

Serve this tasty pineappple casserole as a side dish with your baked ham for a special holiday treat, or it may also be served as a light dessert.

Ingredients:
2 (20 oz.) cans pineapple chunks
1 cup sugar
1/2 cup flour
1 1/2 packages (tubes) Ritz Crackers
1 1/2 sticks (6 oz./3/4 cup) margerine, melted

Instructions:
Prehat oven to 350 degrees F (180 C). Grease a medium size casserole dish with butter.

Drain both cans of pineapple chunks. Reserve juice from pineapples and set juice aside. Place pineapple chunks in bottom of prepared 9 x 13-inch casserole dish.

In a bowl, combine sugar, flour and reserved pineapple juice. Pour over pineapple chunks in casserole dish.

Crumble the crackers in a seperate bowl, and pour melted margerine over crackers; mix well.

Spread crackers over pineapple mixture in casserole, and place in preheated 350 degree F (180 C) oven for 30 minutes, or until juice starts to boil.

Makes 4-6 servings.
