Evaporated Milk Cake

| Comments: A friend of mine made this cake and everyone just loved it. It's very good served any time of the year. |
Ingredients:  1 cup (8 oz./2 sticks) unsalted butter 3 cups granulated sugar 6 large eggs 3 cups sifted all-purpose flour 1/4 tsp. salt 1 cup evaporated milk 1/2 tsp. vanilla extract 1 cup chopped nuts |
| Instructions: Cream together the butter and sugar, adding eggs one at a time to mixture. Sift together the flour and salt. Add 1/4 cup flour and 1/8 cup milk to the mixture; then continue adding flour and milk alternately until all has been added to batter. Add vanilla and chopped nuts. Pour into greased and floured 9-inch tube pan. Place in cold oven and bake at 325 degrees F (160 C) for 1 1/2 hours. Makes one 9-inch tube cake, 12 servings. Icing Ingredients: 1/4 pound (1 stick/4 oz.) butter 8 oz. cream cheese, softened 1 box (16 oz.) confectioners' sugar 1/4 tsp. vanilla extract Instructions: Have all ingredients at room temperature. Mix well and spread on cooled cake. |

Cake turned out very well. The only thing is that I added 1 tsp baking powder as I wasn't sure if not adding will rise the cake. On the whole all the ingredients are in perfect ratio. Thanks
