Pineapple Pudding

Note:
Pineapple Pudding in photo above was made in a bundt or tube style cake pan.

Ingredients:
4oz./100g sugar substitue (ie: Canderel or Spenda or Equal)
4oz. low fat spread or margarine
4oz. self raising flour
2 beaten eggs
1 tin (can) pineapple chunks in natural juice

Instructions:
Place all ingredients except pineapple in bowl and beat well; until mixture is pale and creamy.

Drain pineapple chunks (reserve juice), and place in bottom of a greased 1 pint pudding basin. Place cake mixture on top of pineapple.

Cover with a piece of pleated greaseproof paper and a piece of pleated foil. Tie foil tightly around basin with a piece of string. Place pudding in a steamer and steam for 90 minutes. Turn pudding out onto a plate and pour pineapple juice over. Serve with sugar free custard if desired.

Makes 4 servings.
