Ultra Mint Chocolate Chip Cookies

Ingredients: 2 cups granulated sugar 2 large eggs 1 cup (2 sticks/8 oz./226g) unsalted butter 1/2 teaspoon vanilla extract 1/2 teaspoon peppermint extract 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup semisweet chocolate chips, or double-chocolate chunks |
Instructions: Preheat oven to 350 degrees F/180 degrees C. Cream together, butter, sugar and eggs. Mix in remaining ingredients. Blend well. Drop by teaspoonfuls onto a cookie sheet. Bake in preheated oven for 8-9 minutes. Cookies will be soft. Cool about 1 minute on cookie sheet then remove to a wire rack to cool completely.
