Plum Scones

Servings: Makes 24 scones |
Ingredients: 3 cups all-purpose flour 1/4 cup granulated sugar 1 1/2 tbsp. baking powder 1 tsp. salt 3/4 cup butter or margarine, softened 3/4 cup milk 3 large eggs, beaten 3/4 lb. fresh (ripe) pitted plums, diced |
Instructions: 1. Combine all dry ingredients in an electric mixer and add softened butter (or margarine) and mix until crumbly. Add milk and eggs. Add diced plums and stir just until moistened. Divide batter into 3 portions, and spread into 3 greased 8-inch round cake pans. 2. Bake at 425 degrees F (218 C) for 20-25 minutes, or until toothpick inserted in center of scones comes out clean. Cut each pan of scones into 8 wedges. Makes 24 scones. |
