Servings: 4 |
Comments: Rice pudding is always a favorite. This version is so delightful because it is served with layers of berries in-between the pudding, and garnished with ground cinnamon and a fresh mint sprig. |
Ingredients: 1 pint fresh raspberries or strawberries 4 cups ready-made rice pudding, chilled Garnish: Ground cinnamon Mint sprigs* (see note) You will need: 4 parfait-style glasses, chilled |
Instructions: Spoon two heaping tablespoons of rice pudding into bottom of each glass. Add four to six berries, depending on size, to form a single layer. Continue alternating rice pudding and fruit until glass is filled. Sprinkle with the ground cinnamon and garnish with a sprig of fresh mint when ready to serve. *Note: If you are going to use mint sprigs for garnish, place them on each dessert right before serving as the mint sprigs will wilt in the refrigerator if left too long. Makes 4 servings. |
