Simple Peanut Butter Chocolate Chip Balls

Servings: Makes 3-4 dozen |
Ingredients: 1 cup peanut butter (smooth or crunchy) 1 cup granulated sugar 1 large egg 1/2 - 2/3 cup miniature semisweet chocolate chips (optional) |
Instructions: Preheat oven to 350 degrees F (180 degrees C). Have an ungreased cookie sheet ready. Combine all ingredients (chocolate chips are optional) in a medium-sized mixing bowl. Form dough into 2 inch size balls, and with a fork dip each ball into sugar. Place balls on cookie sheet about 2 inches apart. Bake at 350 degrees F for 5 to 6 minutes for a soft cookie. Place balls in little decorative foil candy cups. Makes 3 to 4 dozen balls. |

I made 2 batches to try today, one with chocolate chips and one with reeses pieces and my family loved both. I will be making more to serve next weekend at my daughter's graduation party.
